Romaine Salad with Feta Cheese

This is my go-to salad in the summer months when romaine is fresh and abundant at the markets. Romaine lettuce is filled with antioxidants, vitamins and minerals, including potassium, magnesium and calcium. It's good for you and tastes delicious on its own in sandwich roll-ups or in a Caesar salad. I like to add green onions, feta cheese and cucumber and serve with a Japanese style dressing.




Ingredients:


8-10 Large Romaine leaves, washed and dried

1/2 Cup Feta cheese, I prefer sheep Feta

2 Green Onions

1/2 Cup diced cucumber, I like the small Lebanese cukes

1/4 Cup Japanese-style dressing


Method:


Tear the Romaine leaves into bite-sized pieces and place in large salad bowl

Crumble the Feta cheese and add to above

Chop the green onions into tiny pieces, using the white parts and a little of the green stems, and add to above

Slice the cucumber into thin slices, and add to above


Add the dressing and toss lightly
