Roasted Sweet Potatoes
Sweet potatoes are nutritious, high in fiber, very filling, and delicious.
Pre-heat oven to 375 degrees F
Line a large baking sheet with parchment paper
2-3 Large sweet potatoes
2-3 Tablespoons of olive oil
1/2 Teaspoon of Maldon or sea salt
2 Tablespoons of chopped fresh herbs, such as parsley, thyme and rosemary
Wash and dry potatoes, do not remove skin, but remove any unwanted spots
Slice the potatoes about 1/2 inch thick, in rounds
In a large bowl, mix the potatoes, olive oil, sea salt and herbs with your hands
Place on lined baking sheet and bake for 15 minutes then flip the potatoes and bake for 15 more minutes until browned on both sides. I like them very crispy so I bake them longer. Yummm.
These are a great side dish with my Parmesan Chicken or on their own with a little Mayo.
