Mango Chutney is a classic condiment for most curries. Simply put, chutney is a sweet and spicy jelly-like condiment made from fruits or vegetables, spices, vinegar, sugar and sometimes raisins, coconut or nuts. Originating in India, chutneys can be dated back to 500 BC. There are so many delicious chutneys to create for your curries, but this simple classic mango chutney is my favourite. Goes with anything, even cheese and crackers!
Ingredients:
3 Cups chopped Mango, frozen is fine
1/2 Cup chopped Purple Onions or Shallots
1/4 Cup Raisins, Golden or Sultana
1/3 Cup dark Brown Sugar
2 Cloves Fresh Garlic, smashed
1 Inch grated Ginger Root
2-3 Tablespoons Apple Cider Vinegar
1/2 Teaspoon Sea Salt
1/2 Hot Red Chili, finely chopped
Method:
In a medium saucepan, add all of the above ingredients
Bring to a soft boil and then turn down to a simmer for about 20-30 minutes until thickened
Remove from heat and let cool
Store in glass container in the fridge. Will keep in fridge for about two months but not in my house!
Serve as a condiment with any of your favourite curries.
This is a real hit alongside my coriander chutney and yogourt raita.
