Easy Chocolate Cake

This delicious and moist chocolate cake is so simple to make. You will be surprised by the secret ingredient. A perfect little birthday cake!


Serve with vanilla ice cream or vanilla whipped cream.



Pre-heat oven to 350 F

Grease an 8" baking tin and line with parchment paper


Ingredients:


1 1/2 Cups Unbleached flour

3/4 Cup of sugar

1/3 Cup Cocoa

3/4 Teaspoon of Baking Soda

1 1/4 Teaspoon of Baking Powder

1/4 Teaspoon sea salt

1 Egg, beaten

3/4 Cup Real Mayonnaise* (the secret ingredient!)

3/4 Cup Water at room temperature

1 1/2 Cups dark chocolate chips


Method:


Sift together the dry ingredients

Blend in egg, water, mayonnaise and blend until smooth

Mix in half of the chocolate chips


Pour into 8" baking tin

Top the cake with remaining chocolate chips


Bake at 350 F for around 35-40 minutes or until knife comes out clean


*Mayonnaise - To me, there is but one Mayonnaise, and that is Hellman's, unless of course you make your own by scratch with a good sunflower oil, not olive oil.
