Banana Coffee Bread

Here's a healthy banana bread recipe heading into the holiday season that is sure to be filled with sweets. You'll be surprised how unhealthy it tastes! The combination of coffee, vanilla, dates, walnuts, molasses, ginger and spices creates a delicious treat with your afternoon tea or coffee.

Simple to make and a little bit guilt-free. And dairy-free.


Pre-heat Oven to 350 F

Grease a loaf pan with oil or butter


Ingredients:


2 Ripe Bananas

1/4 Cup strong Coffee

2 Eggs at room temperature

1/2 Cup Sunflower Oil

1 1/2 Teaspoons of Vanilla

2 Tablespoons of Blackstrap Molasses

2 Tablespoons of dark brown sugar

1 Tablespoon Freshly grated Ginger

1 1/4 Cups Whole Wheat Flour

1 Teaspoon Baking Soda

1/2 Teaspoon Sea Salt

1 Teaspoon Cinnamon

1/2 Teaspoon Freshly grated Nutmeg

1/4 Teaspoon Allspice

6 Large Dates, pits removed

1/2 Cup Walnuts


Method:


In a large bowl, mash bananas and add coffee, eggs, vanilla, molasses, sugar and ginger until well blended.

In a separate bowl, sift together flour, baking soda, sea salt and spices.

Gently fold into banana mixture until just blended.

Chop the dates and walnuts into small pieces and add to above.


Pour into prepared loaf pan and bake at 350 F for about 50-55 minutes or until a knife comes out clean.


Cool for 5-10 minutes and turn out onto a bread board to finish cooling.
