Chewy Molasses Cookies

Molasses in January! You will love the chewiness and ginger spice flavour of these very easy cookies. And the easiest bit is that they are made in a pot on the stove. Make sure you are already full before you try these!



Pre-heat oven to 350 F

Line a baking tray with parchment paper


Ingredients:


3/4 Cup unsalted butter

1 Cup sugar

1/4 Cup Blackstrap Molasses

1 Egg

1 and 3/4 Cups unbleached white flour

1/4 Teaspoon ground cloves

1/2 Teaspoon ground ginger or 1 teaspoon of fresh ginger, grated

1 Teaspoon cinnamon

1/2 Teaspoon of sea salt

1/2 Teaspoon of baking soda


Method:


Sift together dry ingredients, and set aside.


In a medium saucepan, heat the butter, sugar, molasses over low heat until melted

Remove from heat

Whisk in the egg

Fold in dry ingredients until blended


Drop tablespoons of batter onto parchment paper


Bake for about 8-10 minutes until just done. Less for chewy, more for crisp.
