Cheddar Shortbread Cookies

These cookies are delicious with a bowl of homemade soup or served with a little chutney or red pepper jelly and a cuppa nice English tea. A hit of cayenne (optional) give these shortbread a spicy kick.




Pre-heat oven to 300 F

Line a cookie sheet with parchment paper


Ingredients:


1 Cup good quality Salted Butter, cold

1/2 Cup Corn Starch

2 Cups Unbleached Flour

1/8 Teaspoon Ground Cayenne Pepper (optional)

1 Cup Old English Cheddar


Method:


Sift together the flour, corn starch and cayenne if using

Cut the butter into one inch pieces and add to above

With your hands work the mixture until it comes together

Mix in the cheddar and mold the mixture into ball

Roll out the ball into a one inch in diameter log

Wrap in plastic wrap and refrigerate for two hours


Remove from fridge

Slice into 1/4 inch discs and place on lined baking sheet

Bake at 300 F for 30 minutes or until golden brown


Store in air tight container or freeze


Try some homemade apple butter on these or serve with leek and potato soup!
