Rustic Sour Cherry Tart

Perfect for PI Day! or Tart Day. This is the easiest little tart you will ever make! I love sour cherries and I prefer using sour cherries rather than the sweet ones. It's a tart cherry tart! Serve with vanilla whipped cream. I use frozen sour cherries that are available in good food shops. This little rustic tart will be a hit at your next dinner party.




Pre-Heat Oven to 400 F

Grease a 9" pie plate with butter


Ingredients:


Crust:

1 Cup Unbleached White Flour

2 Tablespoons of sugar

1/2 Cup unsalted butter

1 Tablespoon Apple Cider Vinegar


Method:


Mix together flour, sugar and butter until crumbly

Add the apple cider vinegar until just absorbed

Press all of this mixture into a 9" pie plate, using your fingers until evenly covering bottom and up the sides - don't worry if you don't reach the top of the sides.


Filling Ingredients:

2 Cups of Sour Cherries, *I use frozen, thaw first

1/3 Cup sugar

2 Tablespoons unbleached flour


Method:


Mix the thawed cherries with the sugar and the flour until well combined


Pour onto the crust


Bake at 400 F for 10 minutes


Then, reduce the oven temperature to 350 F for another 40 minutes or until the crust is golden brown and the cherries are a little bubbly


Cool and slice and top with a dollop of vanilla whipped cream


The crust melts in your mouth and the sour cherry combination of buttery crust and vanilla whipped cream is a delight on your palate!
