Oatmeal Coconut Cookies

All great cookies start with butter! Here is an easy recipe for oatmeal cookies that are both crunchy and chewy at the same time. Think vanilla and coconut and oats. Try adding your favourite chocolate chips or raisins.







Pre-heat oven to 350 F

Line a baking sheet with parchment paper



Ingredients:


1 Cup unsalted butter, room temperature

1 Cup sugar

1/2 Cup brown sugar

1 Egg, slightly beaten

2 Teaspoons Vanilla

1 2/3 Cups unbleached flour

3/4 Teaspoon of baking soda

1/8 Teaspoon of baking powder

1/4 Teaspoon sea salt

1 Teaspoon Cinnamon

1 1/2 Cups Rolled Oats (I use the quick oats for these cookies)

1/2 Cup unsweetened coconut

Chocolate chips, or raisins (*optional)


Method:


Cream together butter and sugars

Add the egg and vanilla

Then sift together the flour, baking soda, baking powder, salt and cinnamon

Add to creamed mixture

Fold in the rolled oats and coconut, and chocolate chips or raisins if desired


Place large teaspoons of cookie batter on baking sheet

Bake for around 9-10 minutes depending how hot your oven is

They should be a little golden brown on top


These cookies are delicious with a glass of cold milk!
